23 specials
Off the Menu
The menu board is twenty-five doughs. This is the other half of the argument: pizzas that are defined by what goes on top, and mostly by somebody deciding the rules did not apply to them. Buffalo chicken sauced with Frank's RedHot. Taco pizza with the lettuce added after the oven. Banana and curry. Clams and no cheese at all.
Every one of these names a dough from the menu, so the calculator still scales it. The place on the right is where it was invented, as far as anyone can prove.
The specials
American, and unbothered about it
Pies invented in bars, gas stations and franchise test kitchens, mostly between 1960 and 1990, mostly by someone trying to sell a second thing to a customer who came in for pizza. Snobbery about this list is misplaced. Buffalo chicken outsells half of Italy.

What the rest of the world did with it
Pizza left Naples, landed somewhere with different groceries, and adapted. Sweden put a kebab on it. Brazil put a cream cheese on it. Japan put mayonnaise on it. Every one of these is somebody's normal Friday.
No tomato, no mozzarella
The oldest trick on the list
Take away the two things everyone thinks define a pizza and there is still a pizza. These are the flatbreads that never had them, or gave them up: anchovy and onion, cream and bacon, clams and oregano, olive oil and thyme.
