A piped rim of sweet potato mousse around the whole pie
Scale the dough for thisKorean chains spent the 2000s in an arms race over the crust itself, and sweet potato won. A sweetened sweet potato puree is piped into the rim, so the last two bites of every slice are dessert. It sounds like a gimmick and it solves a real problem, which is that the discarded rim is the most wasted part of a pizza anywhere in the world.
The build
- Steam and mash sweet potato with a little cream, butter, honey and salt until it pipes smoothly.
- Roll the dough wider than the pan so there is an overhang.
- Pipe a thick rope of the puree around the inside of the overhang, then fold the dough over it and press to seal.
- Sauce, cheese and toppings inside the sealed rim.
The bake
Oven245°C473°F
Time16-20 minutes
Brush the sealed rim with butter. It should bake to the colour of a good pastry, not a bread crust.
On top
- Sauce
- A sweet tomato base, or a cream sauce. Korean chain pizza runs sweeter than western pizza throughout, not just at the rim.
- Cheese
- Mozzarella, and often a corn and mayonnaise layer with it.
