The pizza Swedes are asked to defend abroad and never bother defending at home. Sliced banana, a heavy dust of mild yellow curry powder, chicken or ham, peanuts, sometimes pineapple. The logic is not Italian, it is the logic of a Swedish curry sauce, where fruit and mild spice and cream have belonged together since long before pizza arrived. Bananas only reached Sweden in any quantity in the 1940s, so they landed as an exotic sweet ingredient rather than a breakfast one.

The build

  1. Sauce, cheese, then cooked chicken or strips of ham.
  2. Banana sliced on a slight angle, not too thin, or it disappears.
  3. Curry powder over the whole surface. A mild Madras-style blend, not a hot one.
  4. Peanuts, and pineapple if you are going all the way.

After the oven A little more curry powder, and cream or creme fraiche in a drizzle at the more indulgent pizzerias.

The bake

Time8-10 minutes

The banana caramelises and goes jammy. If it is still pale and firm it has not been in long enough.

On top

Sauce
Tomato, thin, under everything. It is still a red pizza underneath.
Cheese
Plain mild mozzarella.

You got it right when The banana has browned at the edges, and the curry smells toasted rather than raw and dusty.
