Scale the dough for thisOne Casey's General Store in Corning, Iowa started making these in 1984; the chain took it to every store in 2001 and it is now the thing Iowans defend to outsiders. Sausage gravy stands in for tomato. The trick nobody expects is that the eggs go on already cooked and deliberately underdone, because they finish in the oven and scrambled egg baked from raw turns to rubber.
The build
- Scramble the eggs to about two thirds done, soft and still glossy, and pull them off the heat.
- Spread the gravy over the dough while it is warm and spreadable.
- Half the cheese, then the eggs in loose curds, then crumbled sausage and chopped bacon.
- The rest of the cheese over the top to shield the eggs from the direct heat.

Lower and slower than a dinner pie. You are reheating protein, not searing it.

- Sausage gravy, thick enough to hold a spoon mark. A cheese sauce is the other Casey's option and is the milder pie.
